Nourishing Chicken Soup

Ingredients

  • 10 cloves of crushed garlic
  • 2 tablespoons of finely grated ginger
  • 1 tablespoon of dried turmeric powder
  • 500 g of free range/organic chicken breast, cut into strips
  • 4 cups of diced mixed vegetables (e.g. onions, carrot, celery, parsnips, broccoli etc.)
  • 1 litre of organic chicken or vegetable stock
  • 1 litre of fresh filtered water
  • 2 bunches of chopped fresh coriander
  • ¼ cup (60 ml) mirin or rice wine (optional)
  • 3 tablespoons of organic tamari/soy sauce

Methods

Combine the garlic, ginger, turmeric, chicken, vegetables, stock and water into a large pot. Simmer for 20-30 minutes over a low heat until chicken is cooked through and flavours have infused into the stock. Add tamari, mirin and coriander just before serving. Enjoy in a large bowl.
