Nourishing Chicken Soup             Serves: 4 

Ingredients

  • 10 cloves crushed garlic
  • 2 tablespoons finely grated ginger
  • 1 tablespoon dried turmeric powder
  • 500 g free range/organic chicken breast, cut into strips
  • 4 cups diced mixed vegetables (e.g. onions, carrot, celery, parsnips, broccoli etc.)
  • 1 litre organic chicken or vegetable stock
  • 1 litre fresh water
  • 2 bunches chopped fresh coriander
  • ¼ cup (60 ml) mirin or rice wine (optional)
  • 3 tablespoons organic tamari/soy sauce

Methods

Combine the garlic, ginger, turmeric, chicken, vegetables, stock and water into a large pot. Simmer for 20-30 minutes over a low heat until chicken is cooked through and flavours have infused into the stock. Add tamari, mirin and coriander just before serving. Enjoy in a large bowl.
